Why does the MathJax in this answer render only in edit mode?
Confirmed using Safari on iPad.
Safari on iPad (and maybe Mac, too) has a “feature” where digit strings matching some pattern get converted to telephone links. Here the offending pattern is +1.00784, which is underlined in blue; holding your finger on the link generates a menu inviting you to Facetime or call the number. The link markup breaks Mathjax, so you see the source for the rest of that block.
I’ve noticed this for years, but only on rare posts with long numerical values. Maybe they also have to be in tables or equation arrays? Adding TeX’s thin spaces to separate digit groupings, e.g. 1\,000\,000, breaks the pattern. In this case removing the plus sign might do it.
I consider it a Safari bug, but my opinion doesn’t count for much thrre,.
