Maybe take a look at AAS Multiphonics-cv-3: www.applied-acoustics.com/multiphonics-cv-3/
It’s got polyphony, MPE, physical modelling, FM, rez oscillator, and a lot more.

It was talked down when it first came out, but a lot has been added with 2 updates.

Still a closed system, but it’ll take quite a while to explore with what’s provided.
