I think most polyrhythmic / syncopated stuff is done at the composer level.

for example, pick a meter and then just do it.
if you want to combine and switch or mix 6/4 and 4/4 then start out with 12/4 or something like that.

another technique is to start out with tempo 1, then freeze it to audio, then overdub at tempo 2, ect.
also, last but not least, doing wierd things with arpeggiators can help too. some VSTi’s have a built in arpeggiator, other’s dont, and the quality and characteristics varies a little.
