The number of phases shouldn’t affect the group delay at all. That should only depend on the window length relative to the cutoff frequency.

Personally, I like to think of polyphase-sinc interpolation as equivalent to upsampling (by a factor of 256x or 4096x, or whatever), and then doing linear or nearest-neighbour interpolation at that higher rate.
